Traditional Brownies // The Infinitely Adaptable Brownies

These brownies are infinitely adaptable.  Like caramel?  Swirl some in to the top of the batter!  Like cheesecake brownies? Want to add some nuts and chocolate chunks?  Like biscotti?  See below!

The Brownie Recipe

1 c. (2 sticks) butter, melted
2 scant c. white sugar
3/4 c. cocoa powder
4 eggs
1 t. vanilla
1/2 t. salt
1 1/2 c. unbleached all-purpose flour

1. Melt butter in a large bowl in the microwave.
2. Add sugar, cocoa & vanilla and mix well.
3. Mix salt in to flour and add to butter mixture.
4. Add eggs, stir well.
5. Pour in to a greased and floured 9 X 12 cake pan or two 9 in. cake rounds.
6. Bake at 350*F for 25 minutes or until a toothpick inserted comes out clean.


Caramel Brownies: Complete steps 1 - 5.  Swirl caramel ice cream topping or homemade caramel sauce in to the top of the brownies.  Do this by dropping dollops on top of the batter, then lightly swirling them with a butter knife or a toothpick. Go to step 6 and complete your masterpiece!  If you want to get super fancy - sprinkle a tiny bit of sea salt on top of the cooled brownies.  There, you have fancy-pants salted caramel brownies.

Cheesecake Brownies:  Complete steps 1 - 5.  Mix 1 pkg cream cheese, 1 egg, and 1/3 c. sugar.  Dollop on to the top of the brownie batter in the pan.  Swirl with a butter knife or a toothpick. Complete step 6 and devour these guys!

Chocolate Chunk Brownies: Complete 1-4. Stir in chocolate chunks, chocolate chips, butterscotch chips, mint chocolate chips, or white chocolate chunks.  Pour batter in to pan.  Sprinkle top with walnuts, almonds, or pecans.  Go to step 6 and cook those tasty little buggers!

Mocha Brownies:  Follow recipe, except add 1 T finely ground coffee grounds with step 3. (or you can substitute 1 T instant coffee).

Toffee Brownies:  Follow recipe, after step 5 sprinkle a crushed Heath bar on to the top of the brownies, then proceed with step 6.

Biscotti:  Complete steps 1 - 6.  After the brownies have cooled, slice them using a bread knife into thin strips.  Lay flat on a cookie sheet.  Bake at a very low temperature (think like 200F) until they are crispy and the majority of the moisture has left the brownies.  Voila!  Biscotti!  Grab a cup of your favorite coffee or hot cocoa and enjoy your new treat!
